Avocado and lentil salad with creamy whipped feta

A quick and delicious salad for any occasion that goes well with grilled meats.

Method:

  1. In a food processor blend the feta, cottage cheese and lemon zest until smooth.
  2. Spread the blended feta mixture over 4 individual or 1 large serving plate.
  3. Spread the salad leaves, avocado, lentils, sunflower seeds and red onion over the top.
  4. Mix together the lemon juice and olive oil and drizzle over the salad then serve.

Tips

Where possible use salt-reduced feta.

You can also use the whipped feta as a dip.

This salad is great served with grilled fish or chicken.
